Butter cookies
I tried to make these buttery cookies once and
the result was pretty good, although the appearance wasn't that good . It was
fun making these with so few cutters but i did enjoy them.If i have more money,
i would spend it buying a collection of cute cutters for sure!
_Ingredients:
-75g unsalted
butter, room temperature
-50g icing sugar
(if you don't sprinkle sugar onto the cookies’ surfaces, the amount will
increase to 60g)
-1/4 tsp salt
-1 egg yolk+ 1/2
tsp vanilla extract (beat slightly together)
-150g cake flour
(minus 1 tsp) and replaces by:
-1 tbsp skim milk
powder (any milk powder would work)
-1 egg white
-A little amount of baking powder ( if you don't have,you don't need to add it in.Anyway it would make the cookies rise and lose it shapes while baking)

-Demerara sugar(
for sprinkling on top of the cookies)
_Processes:
1. Cream butter,
sugar and salt until the mixture turns to be fluffy, creamy and kind of white)
2. Add in egg
yolk and beat until incorporated.
3. Sift cake
flour and turn the mixer into the lowest speed and slowly mix the flour into
the butter mixture. The mixture will be separated at first but can be hold
together by your hands.
4. Place the
dough between 2 pieces of baking paper and roll it out to 0.5 cm thick.
5. Place it into
the fridge to firm up, if in freezer it would take 30 minutes.
6. Take the dough
out and using cutters to form shapes. Brush egg white into the surfaces and
dip the surfaces of the cookies into demerara sugar.
7. Bake in
pre-heated oven at 180 degree Celsius for about 10 minutes. After that, lower
the heat to 100 degree Celsius and bake for 10-15 minutes more (it's to make
sure that the cookies are cooked from the outside to the inside, if it's fully
cooked after the 1st 10 minutes, you don't have to worry about continuing
baking it for more than 10 minutes).
